I'm shocked that I'm the first one to figure this out (maybe I'm not?)
Someone mentioned recently about the service menu:
Hold the home button for a few seconds, and while holding it, tap the tune knob twice
you can do it with one hand if you start with your thumb on the home button
Not a whole lot of stuff here, voltage reading, general diagnostics. careful with that speaker test button! don't press it with anyone else in the car!

Once there, choose the camera setting menu, then scroll to the bottom, and choose camera setting

This looks like a menu to make adjustments to the grid lines but it can be open any time (you can see in my photo that I'm in park)
In the menu you can also turn off all of the lines if you're using it to monitor a trailer or something (the most useful way I can think of to use this)
It's a little trippy to see while driving though and quite distracting. *use at your own risk*
Now if only there was a way to record it....
