My dash cam has a parking mode. But unlike many other cars subaru does not give you an easy way to keep the 12v sockets on while the car is off. I have not really found anything that told me what to do to fix this. Anyone have any ideas?

do not plug the dash cam into a 12V socket. wire the dashcam directly to an always on fuse spot. I installed a wolfbox dashcam (it has a parking mode) and have not had any problems wiring it that way. I have front, rear, and inside view cameras.
Wiring a dash cam has been covered countless times before. @FishRamLion has given you some solid information. Here are a couple more threads but there are several others.
In case you miss this fine point in the fuse tap info, the pigtails must be oriented to the passenger side. If this is done backwards, the downstream devices have no fuse protection and any short can damage the Ascents electrical systems.
I have a similar dashcam with a park mode. My camera came with a connection kit that contains two power connections. Both leads go to the fuse panel in my car. I had to determine with a voltmeter which fuse was powered when ignition switch was on and which fuse had power when the ignition was off. If you are interested i can send images.
