I would like to know how well the Ascent tows 3000lbs or more, especially on the highway and what kind of effect it has on gas mileage.

It's decent. I tow 4,800lbs and it only really struggles when the grade is over 5% and in hot weather. I think I got 14-16MPG.
The soft rear suspension doesn't offer alot of confidence, but it's fine if you only tow once in awhile. I would not buy this for a dedicated tow rig until the CVT has been proven.
