On the webpage build, the slate black interior is very limited and my wife is not a fan of the other interior colors(she will be driving in case we buy it)..

Just wondering if we order to built can we get the slate black interior on any exterior color we pick?

Nope... to the dismay of many of us. Subaru has specific color combos with a lot of exterior/interior. Example: my blue limited ascent only comes with ivory colored seats and I would have preferred dark colored seats...

Had I really had the choice, it would have been the blue on black but the ivory is too bleh.
Basically what's available on the website is what you get.
All Touring have Java Brown
I think white can have ivory or black

I mean it will not be a deal breaker but.. wife is going to say something, our past 3 cars have been the gray metallic kind of.

I really liked the blue or cinammon brown

No, only the color combinations on the website are available. Those combinations vary per trim level. For instance, the Base has less exterior color options, and less available interior choices. The Touring will come with Java Brown leather. No matter what exterior color you pick.

So, alas, you're stuck with the colors and combinations shown for each trim level.

There's not an easy visual way, but you can pick a trim level here (link) and see what color combos are available.

Short version is (black interiors in bold italic):
